Breakfast in Bed: Coffee Cup Pesto Eggs Recipe
Whether you are a lazy college student with limited cooking capabilities, or you are an extremely busy individual that just doesn’t have time to prepare an elaborate meal for breakfast, this recipe is for you. All you need is a ceramic coffee mug, eggs, and a couple extra toppings and condiments.
First off, I love pesto. I really enjoy making my own basil pesto, but sometimes I just don’t have time to do all that prep work. So I usually keep a small jar of pre-made pesto in the refrigerator for quick recipes such as this one. Second, tomatoes really make the pesto pop. Cutting a couple of cherry tomatoes in half is the perfect solution for this meal, because you really don’t even need to get out the cutting board. Lastly, I try not to use the microwave in my kitchen, but it just makes things like this so dang easy.
After you have gathered your materials it is as easy as putting it all in the coffee cup. First you’ll need to spray some cooking oil into the cup though.
Cut a grape tomato or two and put it into the cup, with about 1/2 a tablespoon of pesto and two eggs.
Whisk ingredients with a fork.
Time to nuke those eggs. Put the coffee mug in the microwave for 45 seconds.
Flip over the eggs.
Nuke for another 45 seconds and make sure you pay attention, because the eggs may want to jump out of the mug.
